Have you ever realized how food culture has a very close relationship with people’s lives, and each country and region has its own unique food culture.
Among such food culture, washoku, the food culture of Japan, is registered as an UNESCO Intangible Cultural Heritage because of its special culture connections.
For students from overseas, there might not be many opportunities to truly experience the depth of its charms, and even for those who have lived in Japan for years, washoku may be overlooking the deeper meanings.
This time, we have invited Mr. Yoshihiro Murata, chef and representative director of Japanese restaurant “Kikunoi” in Kyoto, to speak about the characteristics of Japanese food and its future in Japan and abroad.
Come find out about Japanese food culture through his lecture and interact among participants. Also, you can taste real dashi during the event!

Born the eldest son of owner of “Kikunoi”, a ryotei (traditional-style restaurant) in Kyoto. While a student at Ritsumeikan University, he went to France to study French cuisine. After graduating from university, he trained at the ryotei “Kamome” in Nagoya.
