Despite major advances in artificial vision and language processing, artificial systems remain limited in the domain of chemical senses. Artificial olfactory systems, for example, continue to struggle with predicting the smell of even simple molecules, as well as complex phenomena such as wine aging. This talk reviews the current state of AI methods in artificial olfaction and taste, outlining both recent progress and persistent limitations. These challenges are used to illuminate broader issues in machine perception, representation, and learning, and to clarify where the current frontiers of AI-based chemical sensing lie.
