The bus tour was designed as a field trip for the participants who signed up for a study project to explore the traditional food culture and silk industry in the Northern Kanto area. As Rishita comes from Varanasi, &#8220;the home to one of the largest silk fabric weaving industries in the world,&#8221; the participants are invited to discuss the similarity and difference of the two places.<\/p>\n<p>\u30e4\u30de\u30ad\u91b8\u9020\u306f\u5c71\u9593\u306e\u5c0f\u3055\u306a\u5de5\u5834\u3067\u3059\u304c\u3001\u305d\u306e\u88fd\u54c1\uff08\u5473\u564c\u30fb\u91a4\u6cb9\u30fb\u8c46\u8150\u306a\u3069\uff09\u306f\u30af\u30aa\u30ea\u30c6\u30a3\u306e\u9ad8\u3055\u3067\u77e5\u3089\u308c\u3066\u3044\u307e\u3059\u3002\u6c34\u306f\u5730\u5143\u306e\u5730\u4e0b\u6c34\u3001\u6750\u6599\u306f\u56fd\u7523\u30fb\u6709\u6a5f\u683d\u57f9\u306b\u3053\u3060\u308f\u3063\u3066\u3044\u307e\u3059\u3002<\/p>\n<p>In the morning, the team visited Yamaki Co. Ltd. The soy sauce &amp;\u00a0<em>miso<\/em>\u00a0(fermented soybean paste) brewery is a gem of the\u00a0<em>Washoku<\/em>\u00a0business. Having been enthusiastic about keeping &#8220;house-made&#8221; tastes since its foundation in 1902, their products (<em>miso<\/em>, soy sauce, tofu, or pickles) have a high reputation. The company is particular about using mineral water from local wells and using domestic corn &amp; vegetable from organic farms. They are also keen on sharing knowledge and wisdom to promote environmental conservation through their business. The workshop in which the students participated is one of their teaching sessions.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1076\" src=\"https:\/\/www.waseda.jp\/school\/honjo\/assets\/uploads\/2022\/06\/A_Yamaki-1_Workshop-begins-thumb-500xauto-5087.jpg\" alt=\"\" width=\"500\" height=\"375\" \/><\/p>\n<p>\u81ea\u7136\u306e\u529b\u3092\u751f\u304b\u3059\u300c\u767a\u9175\u300d\u3068\u3044\u3046\u6280\u8853\u306e\u4f1d\u7d71\u3068\u91cd\u8981\u6027\u306e\u8b1b\u7fa9\u3092\u53d7\u3051\u305f\u5f8c\u3001\u4f53\u9a13\u5b66\u7fd2\u3067\u3059\u3002\u91a4\u6cb9\u3092\u7d5e\u308b\u3082\u3068\u3067\u3042\u308b\u91aa\uff08\u3082\u308d\u307f\uff09\u306f\u3001\u5473\u564c\u3068\u91a4\u6cb9\u306e\u6df7\u3058\u3063\u305f\u826f\u3044\u9999\u308a\u3067\u3059\u3002\u81ea\u5206\u3067\u74f6\u8a70\u3081\u307e\u3067\u884c\u3044\u3001\u6b8b\u3063\u305f\u91aa\u3082\u304a\u571f\u7523\u306b\u3044\u305f\u3060\u304d\u307e\u3057\u305f\u3002<\/p>\n<p>The morning session started with a mini-lecture on fermentation &#8212; how microbes act in fermentation and how\u00a0<em>Washoku<\/em>\u00a0culture has been making use of fermented food. The first step of hands-on experience, which followed the lecture, was to enjoy the aroma and taste of\u00a0<em>moromi<\/em>\u00a0(soybeans and wheat malt, fermented and matured). Under the experts&#8217; supervision, the students wrapped the\u00a0<em>moromi<\/em>\u00a0with special cloth for filtering and carefully compressed them to obtain raw soy sauce. The team appreciated tasty meals made with organic food. Some members couldn&#8217;t resist trying &#8220;tofe soft ice cream,&#8221; and they were happy with the healthy dessert!<\/p>\n<p>\u5348\u5f8c\u306f\u4e16\u754c\u907a\u7523\u300c\u5bcc\u5ca1\u88fd\u7cf8\u5834\u3068\u7d79\u7523\u696d\u907a\u7523\u7fa4\u300d\u306e\u4e2d\u5fc3\u3067\u3042\u308b\u5bcc\u5ca1\u88fd\u7cf8\u5834\u3092\u898b\u5b66\u3002\u82f1\u8a9e\u30ac\u30a4\u30c9\u3055\u3093\u306e\u304a\u4e16\u8a71\u3067\u3001\u666e\u901a\u306f\u898b\u9003\u3057\u3066\u3057\u307e\u3046\u3088\u3046\u306a\u898b\u6240\u3082\u6559\u3048\u3066\u3044\u305f\u3060\u304d\u307e\u3057\u305f\u3002<\/p>\n<p>The second destination was &#8220;Tomioka Silk Mill and Silk Industry Heritage Group,&#8221; one of the World Heritages. The team visited Japan&#8217;s first modern silk factory established in 1872. The students explored the brick buildings and advanced facilities for the workers, with the help of an expert guide.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-1079\" src=\"https:\/\/www.waseda.jp\/school\/honjo\/assets\/uploads\/2022\/06\/D_Tomioka-2_silk-spinning-machines-thumb-500xauto-5093.jpg\" alt=\"\" width=\"500\" height=\"333\" \/><\/p>\n<p>\u30e1\u30f3\u30d0\u30fc\u306f\u73fe\u5728\u3001\u4e8b\u5f8c\u5b66\u7fd2\u306b\u53d6\u308a\u7d44\u3093\u3067\u3044\u307e\u3059\u3002\u30ea\u30b7\u30bf\u3055\u3093\u304b\u3089\u306f\u51fa\u8eab\u5730Varanasi\u306e\u7d79\u7523\u696d\u306f\u8a87\u308a\u9ad8\u3044\u4f1d\u7d71\u304c\u3042\u308a\u306a\u304c\u3089\u5f8c\u7d99\u8005\u3092\u80b2\u3066\u308b\u82e6\u52b4\u306b\u76f4\u9762\u3057\u3066\u3044\u308b\u3053\u3068\u3001\u98a8\u571f\u3068\u7cbe\u795e\u6587\u5316\u306b\u6839\u3056\u3057\u305f\u83dc\u98df\u306e\u7fd2\u6163\u306a\u3069\u306e\u5831\u544a\u304c\u3042\u308a\u307e\u3057\u305f\u3002<br \/>\nVaranasi\u3068\u5317\u95a2\u6771\u306e\u98a8\u571f\u3068\u7523\u696d\u306e\u5b66\u7fd2\u306f\u307e\u3060\u7d9a\u304d\u307e\u3059\u3002<\/p>\n<p>The students have been working on a follow-up project to revisit what they saw and felt in the field trip. Rishita has contributed two short writings for the team. Her essay on Varanasi silk tradition explains why and how the city has become famous for the artistic silk weaving. She also refers to the fact that the traditional hand-woven silk &#8220;faces a stiff competition from the powerloom silk industry&#8221;.
